Heavenly High Protein Quark Dumplings with Berries & Crunchy Breadcrumbs

These fluffy, high-protein quark dumplings are true comfort food – light, sweet, and wonderfully filling. With quark, eggs, and almond protein, they provide an extra serving of protein, while date powder adds natural sweetness. Crunchy breadcrumbs and a fruity berry sauce make this dish perfect as a healthy dessert or a sweet main meal.

Effect on the three constitutions (Lung, Tripa, Beken):

  • Lung (Wind / Vata):
The warm, soft quark dumplings have a strongly balancing effect on Lung. The nourishing consistency, butter, and semolina ground, soothe the nervous system and help relieve inner restlessness and dryness.

  • Tripa (Bile / Pitta):
When enjoyed in moderation, the dumplings have a cooling and harmonizing effect. Quark and berries soothe heat, although Tripa should choose slightly fewer breadcrumbs and less sweetness when very hungry or in hot weather.

  • Beken (Phlegm / Kapha):
For Beken, the dumplings are rather heavy and filling. In a small portion, ideally at lunchtime and with the fruity berry sauce, they can still be enjoyed. Warming spices or a little lemon zest aid digestibility.

In short: particularly soothing for Lung, well tolerated by Tripa, and best enjoyed consciously and in moderation by Beken.

Ingredients:

For the quark dumplings:

  • 500 g quark
  • 2 organic free-range eggs
  • 50 g soft butter
  • 60 g whole wheat breadcrumbs
  • 120 g semolina
  • 60 g date powder
  • A little lemon zest

For the breadcrumbs:

  • 80 g plain or mango-coconut almond protein porridge
  • 50 g whole wheat breadcrumbs
  • 50 g butter

For the berry sauce:

  • 300 g frozen berries
  • 3 tbsp date powder
  • 3 tbsp chia seeds

Preparation:

  1. Mix the quark and soft butter with the eggs to form a smooth cream.
  2. Stir in the semolina, breadcrumbs and date powder.
  3. Let the mixture rest briefly, and meanwhile, fill a large pot with water and bring it to a boil.
  4. Form about 15 small quark dumplings from the mixture.
  5. Place them in the gently simmering water and leave to cook for 8–10 minutes until they float to the surface. (Do not cook for too long, otherwise they will become too firm.)
  6. Meanwhile, melt the butter in a pan for the breadcrumbs and roast the almond porridge, date powder and breadcrumbs in it until golden brown.
  7. For the berry jam, boil the frozen berries with the chia seeds and date powder and let it simmer briefly.
  8. Roll the finished dumplings in the roasted almond breadcrumbs, serve with the berry-chia jam and enjoy.
