Saftige Karotten Muffins vegan

Easter Bunny-themed Juicy Carrot Muffins

These moist, vegan carrot muffins are not only a delicious eye-catcher on any Easter table, but also a wholesome treat for body and mind. With natural ingredients such as grated carrots, applesauce, nuts, and warming spices like cinnamon and nutmeg, they fit perfectly into a balanced, Ayurvedic-inspired diet.

Effect on the Tibetan constitution type:

Lung (Wind):

The muffins have a balancing effect on Lung due to their soft texture, warming spice profile, and the nourishing effect of nuts, oil, and applesauce. Ideal for nervousness, feeling cold, or inner restlessness.

Tripa (Fire):

For Tripa types, the muffins can be slightly heating, especially due to the spices. Enjoyed in moderation, preferably combined with a cooling herbal tea (e.g.  B. mint), they are still well-tolerated.

Beken (Earth):

The muffins are slightly stimulating for the rather sluggish Beken type, especially due to the light baking method and the cinnamon-nutmeg combination. Less oil and an extra pinch of spice can make them even more digestible.

Ingredients

  • 200 g flour (e.g. whole wheat flour)
  • 100 g ground almonds or nuts
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 150 g carrots, finely grated
  • 100 g apple sauce (unsweetened)
  • 100 ml plant-based milk (e.g. almond or oat milk)
  • 70 ml vegetable oil (e.g. organic sunflower oil or coconut oil)
  • 80 g date powder
  • Optional: raisins or walnuts

 How to make it:

  1. Preheat the oven to 180 °C (top/bottom heat) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, mix the flour, ground almonds (or nuts), baking powder, cinnamon, date powder, nutmeg and salt well.
  3. In a separate bowl, mix the grated carrots, apple sauce, plant-based milk and oil.
  4. Pour the liquid ingredients into the dry ingredients and stir carefully until everything is well mixed. Add raisins or walnuts if desired.
  5. Fill the muffin liners evenly with the batter and bake for about 20-25 minutes. The muffins are ready when they are golden and a toothpick comes out clean.
  6. Let the muffins cool in the tin for a few minutes before placing them on a cooling rack to cool completely.
