Lauwarmer Zucchini-Spargel-Salat mit Feta & Keimkraft-Topping

Lukewarm zucchini and asparagus salad with feta & sprouted topping

When you want something quick, fresh, nourishing, and special: This lukewarm salad combines roasted zucchini, green asparagus, and creamy feta with a lemony dressing and crunchy pistachios. Depending on your mood, you can enhance it with GREENS, CHILI KICK, or ROOTS – and tailor its effects to your constitution.

Effects on the Constitutions

  • Lung (Wind/Energy)
The warm, roasted components and creamy feta have a balancing and calming effect on Lung. Particularly harmonious with ROOTS, as the earthy aromas promote stability and calm.
  • Tripa (Fire/Metabolism)
The fresh asparagus and lemony dressing have a lightly cooling and relieving effect on Tripa. For sensitive Tripa types, GREENS is particularly suitable. Use CHILI KICK only in small quantities.
  • Beken (Earth/Water)
The light, fresh nature of the dish ideally supports Beken without being too heavy. CHILI KICK additionally brings warmth and activation and helps balance sluggishness.

Serves 2

Ingredients

  • 1 tbsp olive oil
  • 1 large zucchini
  • 400 g green asparagus
  • 80 g feta cheese
  • 2 tbsp pistachios, roughly chopped
  • fresh herbs (e.g. dill or parsley)

Dressing

  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tbsp Dijon mustard
  • Salt & pepper

Topping recommendation

  • GRÜNZEUG → perfect for a fresh, herbal version
  • CHILI-KICK → if you want a little heat and more depth
  • WURZELWERK → for a hearty, nutty note

Preparation

  1. Cut the zucchini into large chunks, trim the ends of the asparagus and cut the asparagus into pieces.
  2. Heat the olive oil in a large pan. Sauté the zucchini for 3–4 minutes, then add the asparagus and cook until tender-crisp.
  3. Meanwhile, mix all the dressing ingredients together and season with salt & pepper.
  4. Toss the vegetables with the dressing while they are still warm and arrange on a plate.
  5. Crumble the feta over the top, then add the pistachios and fresh herbs.
  6. Finally, top generously with your Keimkraft topping.

Tip

The salad tastes especially delicious with thicker asparagus spears when they get nice roasted aromas. Serve with fresh bread or grilled halloumi.
