Apfel-Mandel-Hafer-Protein-Cookies

Apple-Almond-Oat Protein Cookies

Apple-Almond-Oat Protein Cookies
Juicy, plant-based protein cookies with almonds, oats, and apples – slightly crispy on the outside, soft on the inside. They provide healthy fats, natural sweetness from dates, and are ideal as a snack, energy booster, or sweet treat in between.

Lung (Wind)
Grounding, nourishing, and slightly oily – soothes the dry, restless Lung element. Good for nervousness, inner restlessness, or cold.

Tripa (Fire)
Balancing to neutral – mild, cooling ingredients like apple and dates harmonize Tripa. Best enjoyed chilled.

Beken (Earth)
Slightly elevating due to sweetness and oiliness, but soothingly warming in moderation. Add a little cinnamon or ginger for more lightness.

Ingredients:

  • 90 g rolled oats
  • 30 g almond protein porridge
  • 1 apple
  • 1 tsp baking powder
  • 80 g date paste (optional: pit the dates, soak them, and puree them)
  • 50 g almond butter
  • 50 g chopped nuts (almonds, hazelnuts, pecans)
  • 40 ml almond milk (or other plant-based milk)

 How to make it:

  1. Preheat the oven to 200°C (392°F) with top and bottom heat.
  2. Mix the dry ingredients in a bowl.
  3. Peel and grate the apple.
  4. Mix the grated apple and all remaining ingredients with the dry mixture to form a dough.
  5. Use a spoon or ice cream scoop to place equal portions onto a baking sheet lined with parchment paper.
  6. Press the mounds flat and bake for approx. 15 minutes until golden brown.
  7. Allow the cookies to cool completely, then enjoy them nice and crispy.
