Ingredients (makes approx. 12 mini bites)
- ½ cup cottage cheese
- 2 large eggs
- ½ ripe banana, mashed
- ½ tsp vanilla extract
- Zest of 1 lemon
- 2 tbsp fresh lemon juice
- ½ cup plain almond protein porridge
- ½ tsp baking powder
- 1 pinch salt
- ⅓ cup blueberries (fresh or frozen)
Preparation
1. Preheat the oven to 175 °C.
Lightly grease a mini muffin tin or line it with mini muffin liners.
2. In a bowl, combine the cottage cheese, eggs, mashed banana, vanilla extract, lemon zest, and lemon juice.
Blend everything with a mixer or whisk until smooth.
Then add the almond protein porridge, baking powder, and salt and mix briefly until a batter forms. Finally, gently fold in the blueberries.
3. Fill the muffin liners evenly with the batter (approx. ¾ full).
Bake for 12–15 minutes until the tops are firm and lightly golden brown.
4. Let the mini muffins cool for a few minutes before removing them from the tin. Enjoy warm or cold.
Tips:
- Silicone muffin liners make them easier to remove.
- Perfect for meal prep: They keep in the refrigerator for up to 5 days or can be frozen for up to 1 month.
- For extra flavor before serving, drizzle with Greek yogurt or a light lemon glaze.
