Protein Poppy Seed Cheesecake Tart with Blueberries

Creamy, fruity, and topped with a delicate layer of poppy seeds: This cheesecake tart combines a summery dessert with our Almond Protein Porridge. The porridge forms the base for the moist crust and brings almond flavor and plant-based protein directly into the recipe. It is sweetened with banana and dates.

Lung: balancing – the warm, creamy, and nourishing combination of almonds, poppy seeds, and porridge can soothe and ground Lung.

Tripa: balancing – the mildly sweet and fruity components are pleasant without overheating too much. Blueberries and lemon add extra freshness.

Beken: slightly elevating – nuts, poppy seeds, and the creamy filling are nourishing and rather heavy. Therefore, it is best to enjoy it in a smaller portion for Beken.

Ingredients

For the protein porridge crust

  • 100 g almond protein porridge
  • 100 g ground almonds
  • 1 ripe banana
  • 80 ml plant-based drink, e.g. almond or soy drink
  • 1 tbsp almond butter
  • 1 tsp baking powder
  • 1 pinch salt

For the poppy seed layer

  • 100 g ground poppy seeds
  • 200 ml soy or almond drink
  • 70 g date paste
  • 15 g cornflour
  • 1 tbsp lemon juice
  • ½ tsp vanilla

For the cheesecake filling

  • 400 g plant-based quark or skyr alternative
  • 30 g vanilla pudding powder
  • 100 ml soy drink
  • 70–80 g date paste
  • Juice and finely grated zest of ½ organic lemon
  • 1 tsp vanilla
  • 150–200 g fresh blueberries

Preparation:

Preheat the oven to 180 °C fan-assisted and lightly grease a tart tin (24–26 cm). Mash the banana and mix with the almond protein porridge, ground almonds, baking powder, salt, plant-based drink and almond butter. Press into the tin, shape a small rim and pre-bake for 10 minutes.

For the poppy seed layer, heat the plant-based drink, date paste and lemon juice, then stir in the poppy seeds and vanilla. Mix the cornflour with a little cold plant-based drink until smooth, add it to the mixture and let it thicken briefly. Spread over the crust.

Mix the pudding powder with a little plant-based drink until smooth, then blend with the plant-based quark, remaining plant-based drink, date paste, lemon, and vanilla until creamy. Spread over the poppy seed layer. Add the blueberries and press them in gently.

Bake the tart at 180 °C for approx. 30–35 minutes, let it cool completely, and then refrigerate for at least 2–3 hours, or preferably overnight.

For a particularly nice texture, only cut the tart once it has cooled completely. Fresh blueberries, a dollop of plant-based yoghurt or some almond butter go perfectly with it.

The almond protein porridge works quite differently here than in a breakfast bowl: it makes an easy tart crust base and makes additional flour largely unnecessary.
