Kartoffel-Lavaş (Kartoffel-Fladenbrot)

Potato Lavaş (Potato Flatbread)

These potato lavaş are a healthier alternative to classic flatbread. The combination of high-fiber oat flour and elastic spelt flour creates soft, aromatic flatbreads that are easy to roll out and cook until golden brown in a pan. The boiled potatoes ensure a particularly moist texture, while cheese and parsley give the dough a savory note. Ideal as a side dish, snack, or healthy bread alternative.

Lung: Has a calming and stabilizing effect, especially if the dip is mildly seasoned and not too sour.

Tripa: The cooling yogurt base harmonizes the inner fire and has a balancing effect.

Beken: Rather cooling and heavy, therefore ideal when complemented with warming spices and enjoyed in moderation.

Ingredients

  • 5–6 medium potatoes
  • 1 organic free-range egg
  • 200 g grated Gouda cheese
  • 1 bunch parsley
  • 1 tsp salt
  • 1 tsp baking powder
  • 1.5–2 cups flour (add gradually as needed; we use 50% oat flour and 50% spelt flour)
  • 100 g butter

Preparation

  • First, boil the potatoes.
  • Let them cool, then add the other ingredients.
  • Knead into a dough. The dough should be neither too firm nor too soft, but have a soft consistency.
  • Divide the dough into equal pieces.
  • Roll out each piece on a lightly oiled work surface (lightly oil both sides).
  • Fry in a pan on both sides until cooked through.

Serve with a creamy yogurt and herb dip
